Tuscan traditions in a garden restaurant at the edge of Panzano in Chianti
Stefano Cozzi got tired of being a Florentine attorney and decided to indulge his love of fine cooking and the Chianti countryside.
You can dine on the terrace in warm weather or ensconce yourself in the intimate second-floor dining room, lit by table candles and a fireplace, with great Chianti-side views (so long as you don’t look straight down from the window, where Panzano’s mini urban sprawl festers).
The daily handwritten menu includes primi like tagliatelle al ragù di anatra (they don’t skimp on the duck in the ragù!) and maltagliati ai carciofi (sheets of fresh-cut pasta with artichoke hearts, tomatoes, celery, and carrots).
The meat that goes into the excellent stracotto al chianti (beef strewed in chianti wine and served with sautéed spinach) and maiale al senape (suckling pig with mustard and pearl onions) comes from neighbor and famed butcher Dario Cecchini.

With your appetite sated, drive through the rolling Chianti countryside to the charming hilltop town of Montepulciano, known for its ruby-red Vino di Nobile and Rosso di Montepulciano wines, produced here since early medieval times. Visit one of the towns oldest rock-cut wine cellars and hear how the regions wines are produced as you run your palate by some of the varieties.
After your wine sampling, return to Rome, where your tour ends with a drop-off at your hotel or a choice of points in the center.

The earliest documentation of a Chianti wine dates back to the 13th century when viticulture was known to flourish in the Chianti Mountains around Florence. The first definition of a wine region called Chianti was made in 1716. Wines labelled "Chianti Classico" come from the largest sub-area of Chianti, including the original Chianti heartland.

Enjoy a fantastic creative experience in the kitchen of a
Renaissance Villa, you will learn to cook Tuscan style, our chefs will guide you in preparing a complete Italian/Tuscan meal while learning the techniques of homemade pasta, such as ravioli, tagliatelle and gnocchi. Then, according to the season, you will learn the art of making sauces such as fresh basil pesto, tomato and basil, meat sauce with porcini mushrooms and sweet onions, meat or duck sauce and much more. During the class youll learn to cook a number of basic and advanced Italian dishes as well as secret techniques that make Italian cuisine so rich and delicious. In the oldest part of the medieval village, which is still protected by the castle walls, the owners have created a modern kitchen with tasting and dining rooms as well as a splendid terrace. During your cookery classes at Volpaia, you will discover the essential secrets for preparing a perfect Italian meal.
Essentially, Italian cookery is uncomplicated, seasonal and based on fresh local ingredients. Although the owner will demonstrate dishes from all over Italy, he will pay particular attention to Tuscan food and make sure that ingredients which are widely available will be used. Classes will be given based on complete menus from antipasto to dessert or on a single theme such as first courses, main courses, desserts and olive oil etc.
Your teachers will be Mrs. Giovannella or her daughter Federica. Giovannella is the owner of the winery, who is known to be perhaps the best hostess in the area and her meals at Castello di Volpaia are memorable. After you have prepared your lunch or dinner, you will all sit down to enjoy it with just the right wines in the relaxed atmosphere, which is the heart of Italian cooking, and the appreciation of good food and wine. Afterwards, you can take this newly acquired easy approach home with you together with a booklet of recipes and an apron. Above all, youll discover that the Mediterranean diet is not only the healthiest but the most fun to prepare and eat.
The cooking class uses only local and organic products. You will begin the class by exploring the green garden of the Farm, picking fresh vegetables and selecting the right ingredients. You will then learn all the secrets of Tuscan cooking and cuisine from our trained and experienced chef at our Bottega del Mulino or, for big group, at Restaurant Mulino a Vento. The course consists of making fresh hand made pasta, a second course with vegetable of the season and a dessert. The final test consists of tasting everything that you have prepared with organic wines, low sulphite. Tailored cooking classes are welcomed for guests with special dietary requests.
Immerse yourself in the Tuscan Chianti countryside, and get ready to prepare an Italian five course menu, using the freshest seasonal ingredients available! The cooking class begins at the cooking studio at 10 am; you will be welcomed with a nice cup of tea or coffee and a slice of home made cake or pastries, while you will receive a review of the lesson of the day.
Then get ready to roll up your sleeves, and begin to create a wonderful meal. At 12 pm, you will take a break by sipping a glass of the property wine, before putting the final touches to your creations. At 1.30 pm, you will take your seat and enjoy lunch with the fruits of the labor. The recipes belong to the family tradition, and the ingredients are listed in Italian, so you will also learn a few Italian words that you can take with you when shopping in the local markets. The class includes the wine of the estate, recipes and a terracotta bread warmer customized with the school's logo for keepsake. First you take a little walk in the city center and visit Florence Farmers' Market and discover all its beautiful colors and authenticity, getting to know the butchers, bakers and farmers which Florentines buy their ingredients from. You will have different tastings of typical products and buy some of the fresh ingredients you will need for the cooking class.
In the comfort of our minivan, you will then reach our fascinating farmhouse, immersed in the green of the Tuscan countryside, outside of the busy and bustling city center, where you will have the opportunity to express your culinary art under the attentive guidance of the Chef.
First, learn how to grow organic vegetables exploring our little garden with the chef and pick the freshest vegetable ingredients and Tuscan herbs, right from the plants. What you will pick will depend on the season.
The menu may slightly vary depending on the season and the fresh ingredients available, but among various other things it will usually include also two different types of home-made pasta from scratch (i.e. pappardelle and ravioli) and a dessert.

Start your visit from our tourist office with a short walk with your local guide, and before leaving Florence by bus to the Chianti hills, you will stop for an Italian breakfast in one of Florence's historic cafés "LITERARY COFFEE "where you will have the chance to taste the typical Italian breakfast dishes (sweet and savory croissants, cappuccino, espresso and orange juice). The tour starts at the parking lot of La Badia a Passignano abbey, which is located between Florence and Siena. Your guide will lead you through this unique place that dates back to the year 395, plus its well kept Italian garden. La Badia a Passignano is the result of huge architectural and decorative changes dating back to the Renaissance, reflecting the strong presence of Florence throughout Tuscan countryside.
Everything here is typically Florentine Renaissance art, strongly supported and personally realized by the Medici. The first Medici projects were by Lorenzo the Magnificent in the cloister, the wooden choir, in the extension of the monastery to promote the novitiate, and in the summons of famous artists to decorate the complex. Later, Cosimo I de Medici commissioned additional paintings in the late Renaissance.
At the end of the 1800s, the monastery was transformed into a neo-Gothic castle and private residence. The contrast of two different architectural styles is notable in Chianti, and of strong historical interest. Friends of Florence, a non-profit foundation established in 1998 in the United States, supported the completion of the refectorys restoration of the abbey. Of particular importance in the restoration was the refined Last Supper, frescoed by Domenico Ghirlandaio (1476-77). The restoration of the fresco having now been completed, your guide can show you this true masterpiece.
After the tour of the abbey, which lasts approximately 1 hour, you will have spare time for lunch and at 02.00pm you will reach a winery where you will have the opportunity to taste some famous Chianti wine. The story behind Chianti is best told by those who were born with a passion for wine, who have been making wine for years - those for whom every vintage is a new beginning, having their roots in the past but looking towards the future. The drive to the winery, located about 30 minutes from the Abbey, will take you through the marvelous landscape of the Chianti hills. The the visit to the winery (including wine tasting) takes from 1-1.5 hours.

The tour usually takes between 1,5-2hr, depending on the quantity of the wines selected. It usually starts with the general explanation about the winery, its owners and wines of Chianti Classico. It is possible to see the vineyards and hear the main points in relation to organic agriculture.
The tour is followed by the tasting of the 3 or 6 wines either in the tasting room or on the terrace, if the weather permits. The whole tasting is accompanied by the selection of the local cheeses and ham, followed by the bread and olive oil produce. The whole tasting is finished by the tasting of the Grappa di Montemaggio.
