Culinary specialties of the Amalfi Coast and Sorrentine Peninsula

The holy trinity of ingredients along the Amalfi Coast—the whole Sorrentine Peninsula, really—are fresh mozzarella, fresh tomatoes, and fresh basil.

This is evident in the most famous dish to come from the region, insalata caprese—tomatoes, mozzarella, and basil. Named for the nearby island of Capri but served ubiquitously around here, this simple salad will often be dressed in salt and a bit of olive oil; I like to add cracked black pepper a drizzle of balsamic vinegar.

Classically, a caprese is served in alternating thick slabs of tomato and mozarella sprinkled in torn basil leaves, but sometimes you'll get a nest of bite-sized bocconcini of mozzarella in a sea of halved cherry tomatoes.

Any pasta dish served alla sorretina (gnocchi is a classic) will, again, be tossed with cubed mozzarella and fresh tomatoes and sprinkled with torn basil, the heat of the pasta warming the tomatoes and slightly melting the mozzarella.

Seafood features heavily in most other dishes—these are seaside towns, after all.

And it's almost impossible to finish a meal here without being offered a glass of limoncello, the sugary, lemony aperitif served ice-cold in a shot glass.

Not for nothing, but the hills above the Amalfi Coast lay a decent claim to having actually invented pizza—though, sadly, no pizzeria along the coast or in Sorrento actually stands out the way some of the exalted temples of pizza in Naples do. (The pizza ranges from good to decent; nothing spectacular.)
